Baked Avocado "Provençale"

My lunch today was inspired by Chef Eric Ripert who recently posted about Baked Avocado "Provençale" on his Facebook page. Lucky for me, my avocados were finally ripe enough to make this great recipe! I will definitely be making these as an appetizer for my next dinner party.

Baked Avocado "Provençale" (1 Whole Avocado)
Time: 10mins Prep and Bake

- 1 Avocado
- 1/4c Bread Crumbs (I used a Garlic Herb - Add parsley, salt, garlic, etc. if you only have plain)
- 1-1 1/2tbsp Lemon Juice
- 1/2-1tbsp of Olive Oil
- 1tbsp Parsley, Chopped
- 1 Garlic Clove, Finely Chopped
- Salt (To taste)
- Dash of Cayenne Pepper (Optional)
  1. Preheat your oven to 450 degrees.
  2. Add your bread crumbs, oil, lemon juice, parsley and spices into a bowl and mix.
  3. Cut avocado in half and remove the pit. Add your bread crumb mixture and bake for 5-6 minutes.
  4. Drizzle additional olive oil and lemon juice if desired!

Glad you enjoyed them Chris! I enjoyed them! I had never baked avocados before. I'll have to add more goodness like tomatoes next time.

I added diced tomatoes and some diced red onion....served with baked tequila lime chicken breasts! Thank you for this's just what I needed to compliment my chicken!
